The chefs behind Chapter I

Three chefs, one chapter

Chef Francesco Granata – Guest chef
Naples-born, Athens-based. Chef-owner of Napul’è – ranked 61st in The Best Pizza Awards 2025. Francesco shaped the Chapter I menu, bringing Neapolitan authority, Italian provenance, and the kind of precision that turns ingredients into identity.

Chef Athinagoras Kostakos – Curator
The creative mind behind Meraki, Scorpios, and Noema. As curator of SCALE Chapters, he selects every residency and guards the rhythm – ensuring what arrives at SCALE belongs at SCALE.

Chef Raphael Yerolimatos – Head chef, SCALE
The one who delivers it. Night after night, Raphael Yerolimatos and his team translate the chapter into the plate in front of you – consistent, precise, unmistakably SCALE.
